Sat 14 May

So far, a blessedly quiet week on the pager. Makes me feel more relaxed every time I realize this. I also had a pretty relaxing week at work. The woman who has been driving me especially crazy lately really only spent any time with me on Tuesday and didn't call several times daily (or at all) the rest of the week. No wonder I feel more relaxed!

No plans today other than laundry, paying bills, since I need to stay close to home on call. I had planned to take a lamb shank out of the freezer and try something interesting for supper. I think I'll still try to take it out at 8:15 am and hope I can coax it to thaw enough to do something. I'm thinking about braising it with those parsnips I bought, some potatoes and carrots, yum! If it doesn't thaw completely, I may be able to braise it partly frozen. I may also check the crock pot cookbook for options as I could throw it in the crock pot frozen.

Watched all my Sherlock episodes again this week. Couldn't go hiking so I watched more TV. I'm so ready for them to make three more!

I have the leftover butternut squash with a little parsnip and Vidalia onion simmering to make a small batch of soup for lunch. This is an excellent chance to dig out the immersion blender once it has simmered down a bit.

Oh, my goodness! The butternut/parsnip soup is awesome! Just right for a cool day.

And the lamb shank was very good, although the shiraz overpowered everything which somewhat surprised me.


Food:

8:15 am 1 c Trader Joe's multigrain flaxseed cereal, 1/2 c light original soy milk, 1/2 grapefruit, 103 g strawberries, coffee
10:30 am 2 Fiesta eggs
12:00 pm 1 c butternut/parsnip puree soup, cinnamon scone
6:30 pm Lamb shank, 1/2 c garlic mashed potatoes, 3 c parsnips, peppers, carrots, butternut squash, onions, 12 oz skim milk, 1/6 lemon vodka bundt cake
