Feeling a bit more energetic and like myself today. Always a good thing. Good Pilates class last night; sorry we have to miss next week when we go to the North Shore. Wish Joan was teaching all summer so I could really internalize all of her great tips on posture and form. She does many of the same moves that Patrick did, but explains them differently so you really use your muscles correctly. Never realized what poor form we used before.

My coworker had an excess of farm fresh eggs to sell today so I bought a dozen even though I didn't need them. Thought I'd use some for supper since they're so fresh, so I found a crustless quiche recipe where you can add whatever you like. I had one thawed chicken breast left so I sauteed it with fresh red pepper, Vidalia onion, and some of the fresh asparagus from the market and added fresh basil, thyme, and rosemary. It's in the oven now.

Quiche was yummy, nice and light. Went well with a nice mixed green salad w/some of the yummy strawberries we bought this weekend and a handful of blueberries. Strawberries were so tasty, I decided to have a dish of sliced berries w/a dollop of Lite Cool Whip for dessert!

Food:

7:00 am 1 c Trader Joe's multigrain flaxseed cereal, 1/2 c light original soy milk, 1/4 med cantaloupe, 59 g blackberries, 84 g raspberries, coffee
7:30 am 1 Kopiko Cappucino hard candy
11:15 am 1 Andes mint
11:45 am Chocolate soy shake, raspberry whole grain scone, pear, 2 apricots
6:45 pm Slice magic crust quiche w/chicken, asparagus, peppers, onions, herbs, Swiss cheese, skim milk, and farm fresh eggs, mixed green salad, 1 extra large strawberry, 1/8 c blueberries, slice of small loaf blueberry bread, 12 oz skim milk, 172 g sliced strawberries, 2 tbl Lite Cool Whip
