Fri 23 Sept

Still not finished battling my cold, but feeling a little less fatigued today. Weren't able to hike last night because Dad couldn't get away from work early, but I really appreciated another evening to rest. I suspect that's a factor in feeling a hair better this morning. If we don't get out tonight, I just might feel better for the North Shore. Rest is nice.

Yay! I've missed Lincoln.

I have two large cookie sheets of roasting root veggies in my oven now and I'm salivating. I have a rotisserie chicken (not Costco, but the best I could find locally) to go with them so I'm eagerly anticipating supper with a glass of the Gewurtztraminer to keep me company. Dad is over at Joan Karlen's doing an estimate, so perhaps he'll time it to come home about the time things are ready. If not, I'll save him some.

While I was waiting for the nice guy at Plover Copps to call South Side Copps to find out if they had any parsnips, I started rummaging through a bin of 75% off books. I found an awesome cookbook for $1 - The Hippy Gourmet's Quick and Simple Cookbook of Healthy Eating. There are some recipes that sound incredible including a sweet potato casserole with rum, some great soups, several variations on ethnic flavorings for a big pot of beans. Quite a snag for $1. I've already used the roasted root vegetable recipe to contrast with the one from SparkPeople. I may try the recipe for hot quinoa cereal for breakfast tomorrow; he adds chopped apple and raisins. Sounds awesome.

7:00 am 1 c Trader Joe's multigrain flaxseed cereal, 1/2 c light origina soy milk, 1/4 med cantaloupe, 104 g blueberries, coffee
11:45 am Vanilla soy shake, cranberry/orange scone, med SweeTango apple
6:15 pm 5 oz Gewurtztraminer
7:00 pm 3.75 oz rotisserie chicken breast, 1 c roasted root vegetables, 1 dark chocolate turtle, 2 pc dark chocolate angel food, 1 dark chocolate caramel
