Ate the leftover pork belly with roasted fingerlings and asparagus for dinner last night, left from the Rockman cooking class. I am pretty sure I will never cook with pork belly as it felt decadent to eat so much fat and not altogether in a good way. I was glad the portion was not large. Nothing much on the agenda tonight or tomorrow before Madison this weekend, though I might try to do laundry Friday night. Two days in a row at WalMart. Eewww!
