Trying a new recipe in the crock pot for tonight. I had a beef roast to use up and we've had several roasts lately, so I perused the cookbook collection and found a Fall Beef and Beer Casserole that used several things I had on hand including a leek, parsnip (actually it called for a turnip, but parsnips and turnips are pretty similar), carrots, and ale (the pumpkin ale I recently bought. All I had to purchase was fresh celery (mine had died) and mushrooms. I cut the meat into chunks last night and cut up all the veggies in a separate bag so all I had to do this morning was heat some oil in the frying pan to brown the meat, stir in some flour, add the beef broth, ale and water to boil, and dump everything into the crock pot. And hope it tastes as good as it sounds.


Food:

7:00 am 1 c Quaker Oat Squares, 1/2 c skim milk, cherry juice from concentrate, 1/8 large cantaloupe, coffee
11:45 am 1 slice Sara Lee 100% Whole Wheat w/honey toast, 1 tbl PB, 6 oz vegetable juice, chocolate soy shake
3:00 pm Act II popcorn ball
6:15 pm 1 c fall beef & beef casserole, 1/2 c mashed potatoes, 12 oz light vanilla soy milk, 4 oz white wine
